Business Owner Cooks Comfort Food For The Coast

Whether your definition of soul food is collard greens, cornbread or sweet potato pie, one Gulf Coast restaurant has it all.

While Reynolds Gumbo House is not laced with fancy tablecloths or fine china, the Gulf Coast eatery has what some may consider to be world class cuisine.

From banana pudding to corn bread, customers say it has all the soul food fixins.

"I think it's a heart food. That's the way you feel when you come in here. It's something that you get a little tingly feeling over," says customer Tim Wold.

Mary Reynolds is the brainchild behind the restaurant. Born in Vicksburg, the southern cook now calls South Mississippi home. But the owner says she'll never forget the story behind her success.

"Yes it was hard, but we grew our own vegetables and we worked in the fields and that's why I learned to cook because I was small and my mom she just left me home to do the cooking so that she didn't have to do it when she got home," says Reynolds.

Chain Restaurants serving up 2000 Calorie Portions

In CSPI's March issue of the Nutrition Action Healthletter “Chain Restaurants Encourage Americans To Over Eat Says Watchdog," is warning consumers of the 2,000 calorie dinners, appetizers and desserts that are being served up at popular dining restaurants. Some of these are Ruby Tuesday, On the Border, and The Cheesecake Factory. Don't be fooled that other chain restaurants are not guilty of having extreme calories on their menus, as most restaurants are serving up large portions.

While the article screams for calorie labeling on the menus, this report should be a wake up call for Americans. While most of the fast food restaurants get picked on for calorie overloading, we don't hear a lot about sit down restaurants.

The skinny on those mortgage ‘pre'-quirements

Just because you're 6-feet-6, can run the 40-yard dash well under 5 seconds and won a few trophies in college doesn't mean you're entitled to join the pro ranks. You still have to impress scouts, compete against other rookies and survive the cuts before you can make the team. The same generally can be said about obtaining a home mortgage loan. If you're out hunting for a house, you need to secure financing. And that means you'll need to convince a potential lender - and a seller, for that matter - that you're a worthy borrowing candidate by impressing them with your verified stats. Essentially, that's what they mean by getting “pre-approved." But first, you may need to convince yourself that you've got what it takes financially to buy that home by getting “pre-qualified."

Canada's New Food Guide Now Available

Canada's new food authority, "Eating Well with Canada's Food Guide" is now available at the County of Lambton Community Health Services Department.

The revised food guide, from Health Canada, contains information on the amount and the types of food recommended for age and gender plus clear guidelines on portion sizes. The guide, to help healthy Canadians two years of age and older meet nutritional needs, is based on the most current nutritional science to promote healthy growth and development, and to reduce the risk of chronic disease such as obesity, heart disease, Type 2 diabetes, certain cancers and osteoporosis. "The new Guide gives more direction on selecting the best choices within each food group," says Susan Harris, Registered Dietitian with Community Health Services. "We encourage everyone to continue enjoying a "rainbow of colours" of foods."The Guide addresses key nutrients and recommendations including:• Vitamin D supplements for adults over the age of 50 years.• Multi-vitamin supplement with folic acid for all women who could become pregnant, who are pregnant or who are breastfeeding.• Eat at least two servings of fish (i.e.

McDonald's: In the UK to stay

Britons and Americans may be "separated by a common language," as George Bernard Shaw quipped, but they increasingly are united in their fondness for fast food. So McDonald's has little to worry about even though Prince Charles was heard suggesting that the hamburger chain should be "banned." The House of Windsor has less power in contemporary Britain than the House of the Big Mac.

Charlie W. may diss Mickey D's, but his future subjects have warmed to the convenience of American-style fast food chains, which have blossomed in a country that 30 years ago was short on affordable and family-friendly eateries. Like showers, ice in soft drinks and "en suite" hotel rooms (bedrooms with their own baths), fast-food restaurants are a U.S. import that have become part of the British way of life.
