Where it all began

When the culinary history of Arkansas City is written, it should include the name of Lucy Mora under the heading of "Mexican Food."

It was Mora, now a resident at Presbyterian Manor in Arkansas City, whose recipes for tacos, enchiladas, tostadas, refried bean, rice and salsa provided the staples for what probably was the first generation of the city's Mexican food aficionados in the 1960s before franchise restaurants.

At 86, the slightly built woman is battling Parkinson's but has eyes that twinkle when you mention the Green Door. It was a bar, owned by Wes Robinson, who offered her the setting for what rapidly became a one-room food delight. She started simply with a few dozen tacos sold over the bar initially.

"I didn't know how many to make, because I didn't know how popular they'd be," she said.

Chicken-fried steak recipe

Q: What is chicken-fried steak? I always thought it was chicken, but my husband says it is actually steak. Also, is it difficult to make?

|-- Julie Valdez, via e-mail

A: You're talking about one of my all-time favorites. As I understand, it was brought over by German immigrants in the 1800s. Probably in the manner of schnitzel (or cutlets), which always refers to meat (beef, pork or veal), pounded out in seasoned flour before pan-frying.

Pound your favorite meat in flour with a kitchen mallet or the edge of a sturdy plate. Fry it in bacon grease and, after removing it from the pan, add some milk to the bacon grease to make a gravy. After you eat one of these, you're ready to go out and plow the back 40. This is real comfort food, not seen around here much but still very popular in the South.

City Life-Healthy Choices

While true that Hoboken boasts several gourmet health food stores and numerous yoga studios, New York City is the ultimate destination for finding healthy foods and taking care of yourself.
For example, a chain of stores called the Whole Foods Market are located near Union Square, Columbus Circle and in Chelsea. These stores provide a wide variety of organic products. Whole Foods Market resembles Hoboken's new Garden of Eden store, but is bigger, therefore providing a greater variety of baked goods and other healthy essentials.
In addition to healthy foods, the Chelsea Whole Foods Market has a separate store next door, Whole Body at Whole Foods Market, devoted to non-food items. The Whole Body store stocks vitamins and supplements. Exercise DVDs of all kinds, including yoga, tai chi and weight training can be found there.

Colo. Waits On Food Stamp Benefit Decision

(AP) WASHINGTON A federal appeals board has 30 days to decide whether Colorado must repay $11 million to the Agriculture Department for food stamp benefits the department said were overpaid because of a computer error.State officials and the Agriculture Department Food and Nutrition Service argued the case Tuesday before the USDA State Food Stamps Appeals Board, said Steve Savage, a spokesman for the Food and Nutrition Service. The federal government contends it incorrectly issued the $11 million in benefits because of errors generated by Colorado's centralized computer benefits management network, which was plagued by problems after it came online in September 2004.Colorado officials question the USDA's analysis that led to that number. If the state disagrees with the appeals board ruling, it can appeal to the courts, Savage said.

Grocers pull recalled peanut butter

Several area grocery stores pulled recalled jars of peanut butter off their shelves Thursday, taking no chances after the brands were linked to a salmonella outbreak.

Food Lion in Stanleytown, Kroger and Wal-Mart all removed the recalled peanut from their shelves on Thursday.

Wal-Mart carried both the Great Value and Peter Pan brands, while Food Lion had the Peter Pan brand.

ConAgra Foods Inc. told consumers to discard certain jars of Peter Pan and Great Value peanut butter after the spread was linked to a salmonella outbreak that has sickened almost 300 people nationwide, The Associated Press reported.

Lids of jars with a product code beginning “2111" can be returned to ConAgra for a refund, the company said. Affected jars were produced by ConAgra at a plant in Sylvester, Ga.
